CUMBERLAND

The Pork Lab Cumberland sausage is our take on a true classic, pork seasoned with a restrained blend of herbs and spices to let the meat lead. Balanced and full-flavoured, it’s made to highlight the natural character of the pork rather than mask it. Our Chaurice sausage is bold, spicy and unapologetically savoury coarse pork seasoned with paprika, garlic and a warming hit of chilli. Rooted in the flavours of Louisiana, it’s juicy and aromatic with just enough heat to linger without overpowering the meat. Naturally gluten free, it’s made without any added gluten containing ingredients, so you can enjoy all that rich, fiery flavour with confidence. Equally at home on the BBQ or in the pan, it delivers big flavour and proper bite wherever it’s cooked.

BRATWURST G/F

Our Bratwurst is clean, savoury and finely balanced smooth pork, gently seasoned with white pepper and warming spices, which we grind whole in house for freshness and clarity of flavour. Made without rusk or fillers, it’s naturally gluten-free, allowing the quality of the pork and spice to speak for itself. Mild, juicy and versatile, it works just as well pan fried, grilled or served simply with mustard. A restrained, confident sausage that lets texture and technique do the work.

Our Marylebone sausage is a refined take on a London classic, rooted in the tradition of well seasoned pork sausages once made for the city’s markets and dining rooms. Smooth pork is gently seasoned using whole spices we grind in house, keeping the flavour clean, balanced and precise. Mild, juicy and versatile, it’s an everyday sausage with quiet heritage familiar, comforting and carefully made.

Our Lincolnshire pork sausage is a regional classic, defined by the distinctive use of sage and a well balanced, savoury seasoning that lets the meat lead. Juicy and full flavoured, it’s built for comfort and familiarity, with a proper bite and a clean, rounded finish. Ideal for breakfast or everyday cooking, it’s a traditional Lincolnshire sausage made with care, restraint, and respect for the craft.

The Pork Labs South London Sausage is inspired by Kennedy’s Sausages, the beloved South London pork butcher chain that served traditional pork sausages, pies, and pastries for over 130 years. When the family business closed in 2007, it left a nostalgic gap in communities like Peckham, Lewisham, and Bromley—one that lives on today through fond memories and the classic flavours this sausage aims to honour.

Pork Labs Lincolnshire sausage meat is ideal for sausage rolls, thanks to its coarse texture, high pork content, and classic sage led seasoning.
